Winter Chantrelles
      #215607 - 11/12/05 09:37 PM

Finally showed up. Cantharellus tubaeformis...called Yellow Foot or Winter Chantrelle. Discovered this species last year and could have picked several hundred pounds as they were everywhere we looked in large quantities. They are small and thinner fleshed than the well known yellows or whites but have the same delicate great chantrelle flavor and in my opinion are better in texture when cooked. Once you learn what they are there is no worries about confusing them with a poisonous species. Cab and upper stem will be brown with the foot of the stem yellow. The key identifier is the hollow stem with the hollow extending through the cap. I'll have some pics soon.

I've got to get a better digi camera! You can see why they are called the Yellow Foot. Other key characteristics are the gills are the typical indistinct chantrelle form; the stems are hollom and open all the way thru the cap. You can see the dimple of the opening on one of the caps.

Found all 4 chantrelle species today. Some of the yellows were new crop. Add a bunch of hedgehog shrooms plus Zellers boletes and we be eaten 6 mushroom stroganoff for dinner.

I found chantrelles like that before. I just figured they needed more fertilizer.
