How do you take care of your birds? I try to take care of processing them within 24 hours. Rough pick the birds then cut off wings and feet. Finish pick then dip in melted parafinn and toss in bucket of cold water. Once all the birds have been dipped and chilled you can peel off the wax coating along with all the remaining down and feathers. Cut off the head and tail piece and split them down the back bone. Entrails are removed and the bird is washed. For freezing I place them in milk cartons and fill to the top with water and freeze. I am not a big fan of breasting out birds as I consider the leg meat to be the tastiest portion and what is a duck dinner without that crackling sweet skin?

Well, I usually take a nap. Then, when I wake up, I clean the birds. If I'm smoking or jerkying them, it's breast city. If I'm baking them, I'll pluck and burn off the pin feathers then gut.

Speaking of which, I'm going to nap now, then cleanm birds in an hour or two...
