Canning Razor Clams new
      #221538 - 12/07/05 11:56 AM

I'm looking for a recipe for canning strips of razor clams. Heard about one that you add some garlic and liquid smoke but no details. Any help appreciated.

Here's a link:

It basically is the same as the Ball Blue Book. I would think you could add any flavoring you want. I think I would try a couple of half pints, before I forged ahead with a bunch of hard to get razor clams. Sounds good though.

I think maybe one clove of garlic, and a drop or two of liquid smoke would be plenty for a half pint. What'da think?

Canned coarse ground razor clams...dunp a tin in a bowl...sprinkle sea salt and lemon or lime juice over the bowl....consume with a Guiness plus a double shot of a nice single malt scotch. One of those life is good experiences. Personally I'd leave out the liquid amoke, garlic and other flavorings.

It's not really stolen from another board cause it wrote it to start with, But it's a reprint.

From my last limits of Razors I smoked and canned up a few of them. I
didn’t can the diggers they are way to good as clam strips.

Anyway all I did was create a heavy rolling smoke at about 160 and put
the necks and linings in for an hour. No brine, no soak, no special prep.
Then cut them up into bite size pieces after smoking. Tight packed them
into a ˝ pint jar. Added a pinch of salt a pinch of Old Bay and a little olive oil. Then Pres/ cooked them for 110 mins.

They where tender and had a good smoke taste.

Everything tastes better when it sits on a Ritz.

Razors is easy.
