when i was living in the smokies i found a few - never seriously hunted them. as such, never really acquired a taste for them. how you guys preparing them....sauteed in butter and garlic?

Dean,
that's how we cook'em. These that we are getting now are the early morels, and are a little different from the ones they get in eastern Wash, where the fires have been. These, we parboil, and then toss the water, then sautee with the garlic in butter.
We picked a bunch for dinner tonight. We waited too long, 'cuz our daughter was coming out to visit, and wanted a flashback to her child hood.
There were a bunch that were too old.

You parboil the early morels to get rid of a potential toxin which is basically rocket fuel. It's highly volatile and heat gets rid of it. It's similar to that Soju stuff.

Do not breathe the fumes/vapors from the parboiling either as if there are any toxins it is cooked off in the fumes.

I haven't done any serious mushroom picking since I was a kid, and then all of them had to be inspected and okayed by Granny ["The Polish Mushroom Queen"].

If you leave the mushrooms out too long you get a nice concoction similar to Soju, but more potent called Mushroomshine.

Where I grew up in So. Oregon our ranch was next to a huge 20 year old forest fire...needless to say...it was full of deer and morels! God I miss them in my scrambled eggs in the mornings! How far do you have to travel in Washington for em'?
