Late Season Harvest

Walked back behind our cabin to see if there was going to be at least one Matsutake for harvest this season. Immediately found 2 that were past due. That got the juices flowing as I hurried down the trail to where we'd harvested a handful every previous season. As I make the corner I spied not a single or a couple Matsu's but a blessed clump of them just off the trail. As I am down on my knees harvesting them I look further back in the salal and huckleberry thicket and there's an even larger mass! Then as I am rooting those out I look to both sides and there's two more massive clusters! Totally covered in old growth forest duff, pitch and dirt I scramble on my knees to each gold mine! Back at the cabin I process about 15 pounds of Matsu's after trimming.

Then it's off to my black chantrelle patch and yes all of the small ones that I hadn't harvested 2 weeks ago are now fully grown! Hurriedly picked a pd of those plus a handful of orange chantrelles and hedgehogs.

Several of my co-workers found more chantrelles than they had bags to put them in. Until we get a severe couple days of freezing weather it's prime time for shrooms!

If I find any good ones this week, I plan to put them in the stuffing on Thanksgiving.

First sauteed 4 garlic cloves and a 1/4 cup chopped onions in 4 tsb olive oil and 4 tsb butter with a couple good grinds pf black pepper. Added chopped 2 cups black chantrelles plus a cup of orange chantrelles and hedgehogs. Once cooked thru I use a slotted spoon to remove the mushrooms from the sauce. Then I dump in 2 cups of chopped Matsu's. Once those are just cooked thru I make a ridge of organic basmati rice across a plate and spread the Matsu's along one side of the rice ridge and then spread the more earthy shrooms along the other side of the rice ridge.
