Has anyone here built their own smoker? I would be interested in how you might have done yours if any of you have! I'm thinking about the size of a refrigerator or smaller but do not want to use an old refrigerator!

have burned out several of the refrigerators and those actually worked the best for a quick/large/smoker build. Wood burns.. so be sure to keep it away from the house/garage if you use that. wood is the easiest to work with and cheapest.
Don't have to use the old refrigerator but if you can get the metal sides and build your own frame. I would use aluminum square tube and make a box frame. Design the frame around your actual shelves/racks as this will be the hardest part to do right. for racks if you can get some donut fry racks or even use oven racks if you can get enough of the same size.
heat source can be a electric hot pan or a propane burner.. electric is easier to deal with but not as hot in colder climate.
insulation to get smoker up to temp needs to be addressed too unless your gonna cold smoke.
Heck ya can use brick or cement blocks if your really got the urge to make it purdy. Now days the little chief or let the local smoke shop do it for convience.

My first smoker, back in the early 70's, was one I made out of a new metal garbage can. Used an electric hot plate and pan of wood chips for heat/smoke. Put bolts through the side at various levels to place water pan and racks on. Worked great, but was sure a happy puppy when I got my first Brinkman in the later 70's.

I've heard of folks using old metal filing cabinets as homemade smokers...

How did you hook a thermostat? I've got one of those round smokers that origanally worked with briquetts but I've converted it to electric, which is just an element that sits in the bottom, would like to use that if possible with a thermostat

i got the thermostat from mcmaster carr it cost about 70.00 it is an inline thermostat it is pretty easy to hook up you could get a thermostat temp control out of an old oven and use it or get a hot plate from wal mart it has a control for low med and hi just install a thermometer to get your smoke chamber temps

I googled homemade smokers and filing cabinets, and here is a link to one of them.
http://www.ibiblio.org/lineback/bbq/troy.htm
Looks kinda nifty being able to have racks rigged in each cabinet, and you can just pull each of them out to insert/check/remove meat.
This link shows a 2-cabinet system, but you can probably make a decent one with just one cabinet (place the heating element at the bottom of it). Might need a little bit of tinkering to make holes, mount racks, and rig a platform for the hot plate. But the file cabinets should be easy to find at Goodwill or craigslist for cheap.
