I have a place I take my game meat to, and every time I do it comes out perfect. No variation between batches, as these folks have it down. Northwest Sausage and Deli is great.

Every time I take my sausage someplace else, it doesn't work out. Either they screw with me, or it just doesn't turn out the way I like it. One time I gave them my meat scraps during the deer season and after 3 weeks I called, said it would be another 2 weeks. We played this game for a while, when finally 6 months later he said he'd have half of it ready by the weekend. I told him where he could put the sausage, and I never picked it up.

This year I had set aside some elk scraps in case I wanted to do something different, and I found a place that does my favorite sausage, Land Jaeger. I bought a pound from the store, and it was great. A few weeks later I tried another batch, also great.

I took in 52 pounds of scrap a week or so ago and had them make me some. Spent $200 on the processing, and it looked great! Took a taste, and it was nothing at all like what I had tried. The mouth feel (texture) was perfect, looked great, but it just didn't taste anything like their retail product. I know that game meat has a different taste, but the difference wasn't due to that. Not going to trash them publicly, so don't bother.

Anybody want about 50 pounds of Land Jaeger, free? I'll deliver bewteen Aberdeen and McCleary.

Andy I feel your pain. I too have a place where I always take my meat. I have always gotten great LandJaeger and pepperonni. This year, the pepperoni was as usual, vey good. The LandJaeger was a different story. It's wet??????
I tried putting some in the convection oven on drying cycle like I do with jerky, and it's better, but the flavor is still not the same, and the texture is not right. Don't know what to do next year.
This is the same place I've been using for years. Guess I'll have to have a talk with 'em, but I don't have any of the old "good stuff" left. (Chrissy likes it and scarfs it every time I open a pkg. )
I spent over $200 on pepperoni and LandJaeger.
Mrs. Nav sayes it seems like a lot of money for an ol' retired guy on a fixed income to blow.

I usually spend $300-500 a year on pep and summer sausage between all animals. This was an additional $200. Good year last year, bear (one half), elk and two deer (Hunter and I).

Got a bear hunt in April, so this year should be about the same in cost.

That really sucks when things don't turn out the way you expected....waste of money and game meat.

I just got some more supplies for making sausage, including new [for me] seasoning kits. Anxious to try them out but the smoker is currently a bit "under the weather" and inaccessible.



Hopefully I'll have this mess removed by the weekend and I'll be back in business.

I've tried several and now I stick with Lind's meats in Covington. Had one place waste half in elk on pepperoni that was way to hot and dry. Owner gave me my money back after admitting they screwed it up but I lost the 1/2 elk!
If you find a place you like...stick with it.

Sorry to hear about it Dogfish. I had the same experience 2 years ago on moose sticks. First batch was great, then took in 50lb of burger a couple months later and it ended up tasting way different.

Dogfish has the right place to go. I live a couple of miles from Northwest sausage (Dicks Brewing Co.) I haven't had any bad experiences there.

Try Francis meats in Willipa Valley. They make a Jalapeno summer sausage that has pieces of chedder jack cheese cooked into the middle of it. The kielbasa has some texture to it and does'nt taste like you are eating an oscar meyer weiner. That is why I quit going to Dicks (NW sausage and Deli)

My all time favorite is Home Meat Services In Shelton (or close - its all the same to me. Kinda like "Seattle") They have a large selection to choose from and the prices have always seemed fair to me. If that is where you are talking... sorry.

If I was down that way I would take a little off your hands too. But I shouldn't be down that way for a couple of weeks.
