Toasted salmon sandwich

Simple but delicious...Left over barbecued salmon or smoked salmon placed on a roll with cheddar cheese placed on top. Place in toaster oven until cheese melts, remove from oven and put your favorite veggies on and close it up....YUMM. The melted cheese is what holds the salmon flakes on the sandwich. I'll endorse that!

I do something similar with smoked fish.

Crunch up fish
add mayo
add dijon mustard (just a little)
add grated cheese
mix this stuff all up.

make sandwich with the above filling. butter both sides of bread and brown both sides in pan.

Serve with Beers. [bellyup]
