We usually just breast our ducks. Lot quicker after a long day of hunting. Take a non stick skillet and put some onion and bacon in it and start frying. Slice up the duck breast into thin strips. Drop into pan with bacon and onion. When it is just about done put a small amount of barbecue or terriaki sauce in and cook long enough to glaze it on the meat. My kids and I love it this way. I told them if we could't come up with a way to eat them we wouldn't hunt them.

Gut and hang in the garbage can until gone.

Just joking..here's a favorite.

Pluck goose or duck.

Boil them in water and a pack of crab boil for 20 minutes.

Git that BBQ going on medium-high.

Take bird out of water and BBQ until golden brown. Turn often. (will take about half hour if done correctly)

Eat skin, throw rest away. Just kidding again!

When carving, serve a piece of skin with each piece of meat. goooood. Eat with plumb sauce. Not that light colored stuff either, get the black.

This method will produce a goose that is not dried out. [bellyup]

Another great way to do your ducks and geese is to slice the breasts into thin slices, bread with flower, While it is frying sprinkle with ground sage(lots) when brown on both sides, add 2 or 3 cans of chicken broth, cover and simmer for about an hour. Remove lid and let thicken to desired consistency. Dish over rice and injoy.


Also cut your breast meat into small squares(no more than 1 inch) and marinade in teriyaky for at least 12 hours. Rap them in thin sliced bacon and eather stick them on skuwers and stick them on the barbi or place in a backing dish and bake at 350 for about 30 min. Remember steel shot really hurts when bitten into. Cut out ALL fatty tissue. That seams to be the hardes place to find it.
