I saw this on Food Network station [Paula Deen show] this morning and tried it out for supper tonight.....very good and easy.
------------------------------------------------------- INGREDIENTS:
2 1/2 cups water 1 (14-ounce) can diced tomatoes with green chilis 1 (8-ounce) can tomato sauce 1 pound fully cooked smoked sausage, cut into 1/4-inch slices [I used Hillshire Farms smoked beef sausage] 1 pound medium, fresh shrimp, peeled and deveined
JAMBALAYA MIX, ingredients:
1 cup long-grain rice 3 tablespoons dried minced onion 1 tablespoon dried parsley flakes 1 tablespoon beef bouillon granules 1/2 teaspoon dried thyme leaves 1/2 teaspoon garlic powder 1/2 teaspoon ground black pepper 1/4 teaspoon cayenne pepper [if you don't like spicy reduce to 1/8 or omit] 1/4 teaspoon salt 1 bay leaf
DIRECTIONS:
In a small bowl, combine Mix ingredients: onion, parsley, beef bouillon, thyme, garlic powder, black pepper, cayenne pepper, salt, and bay leaf. Pour into cellophane bag. Store in an air-tight container.
In a Dutch oven or pot, combine all the mix, water, tomatoes, tomato sauce and smoked sausage. Bring mixture to a boil over medium-high head. Cover, reduce heat and let simmer for 20 minutes. Add shrimp and cook for an additional 5 to 7 minutes, or until shrimp are pink.
------------------------------------------------------- I'll probably reduce cayenne pepper to 1/8 tsp next time. In future I might try using fresh diced onions instead of the dried to see what difference that makes [it was good with the dried onions]. Might also add some diced red and/or green peppers to the pot [would expect you'd need to saute fresh onions and peppers before adding to the pot cause I don't think the cooking time would be enough to do the job.

I made this for dinner tonight. It was quick and easy and tasted great. I added a 4oz can of mild green chillies and went with a 1/4 tsp of Cayenne. I like spicy and flavorful but not burn your face off. 1/4 tsp was perfect for me but with any 'heat' YMMV.
