Jambalaya recipe new
      #360034 - 12/31/08 05:53 PM

I saw this on Food Network station [Paula Deen show] this morning and tried it out for supper tonight.....very good and easy.

-------------------------------------------------------
INGREDIENTS:

2 1/2 cups water
1 (14-ounce) can diced tomatoes with green chilis
1 (8-ounce) can tomato sauce
1 pound fully cooked smoked sausage, cut into 1/4-inch slices [I used Hillshire Farms smoked beef sausage]
1 pound medium, fresh shrimp, peeled and deveined

JAMBALAYA MIX, ingredients:

1 cup long-grain rice
3 tablespoons dried minced onion
1 tablespoon dried parsley flakes
1 tablespoon beef bouillon granules
1/2 teaspoon dried thyme leaves
1/2 teaspoon garlic powder
1/2 teaspoon ground black pepper
1/4 teaspoon cayenne pepper [if you don't like spicy reduce to 1/8 or omit]
1/4 teaspoon salt
1 bay leaf

DIRECTIONS:

In a small bowl, combine Mix ingredients: onion, parsley, beef bouillon, thyme, garlic powder, black pepper, cayenne pepper, salt, and bay leaf. Pour into cellophane bag. Store in an air-tight container.

In a Dutch oven or pot, combine all the mix, water, tomatoes, tomato sauce and smoked sausage. Bring mixture to a boil over medium-high head. Cover, reduce heat and let simmer for 20 minutes. Add shrimp and cook for an additional 5 to 7 minutes, or until shrimp are pink.

-------------------------------------------------------
I'll probably reduce cayenne pepper to 1/8 tsp next time. In future I might try using fresh diced onions instead of the dried to see what difference that makes [it was good with the dried onions]. Might also add some diced red and/or green peppers to the pot [would expect you'd need to saute fresh onions and peppers before adding to the pot cause I don't think the cooking time would be enough to do the job.

I made this for dinner tonight. It was quick and easy and tasted great. I added a 4oz can of mild green chillies and went with a 1/4 tsp of Cayenne. I like spicy and flavorful but not burn your face off. 1/4 tsp was perfect for me but with any 'heat' YMMV.

WTF? LOL
She's not ugly by any means but I'd hate to see what you guys have for "Idaho hotties" to compare her to. Must be that winter lack of daylight disease thingy.
