What better to enjoy during this $hitty winter weather, than a good bowl of soup. Try this one, I think you'll enjoy it. 
INGREDIENTS:
1 Pound SWEET ITALIAN SAUSAGE, GROUND/BULK 2/3 Cup UNCOOKED LONG GRAIN RICE 3 14 OZ CANS BEEF BROTH 1 15 OZ CAN WHITE OR NAVY BEANS, RINCED AND DRAINED 1 15 OZ CAN DICED ITALIAN STYLE TOMATOES, HAS BASIL, GARLIC AND OREGANO IN IT 1/4 Teaspoon PEPPER 1 10-OZ BOX FROZEN CHOPPED SPINACH, THAW, DRAIN, SQUEEZE DRY -------------------------------------------------------- 1. COOK GROUND SAUSAGE OVER MEDIUM HEAT IN A SOUP POT UNTIL THE MEAT IS BROWNED AND CRUMBLY. DON'T DRAIN THE FAT, THAT ADDS FLAVOR.
2. ADD RICE, BROTH, BEANS, TOMATOES, AND PEPPER.
3. BRING TO A SIMMER.
4. COVER AND COOK 12-15 MINUTES OR UNTIL RICE IS TENDER. STIR IN CHOPPED SPINACH AND LET SIMMER FOR A FEW MINUTES. -------------------------------------------------------- NOTES:

INSTEAD OF RICE, TRY DITALINI PASTA.
GARNISH WITH PARMESAN CHEESE.
I USED RED KIDNEY BEANS ONCE AND THAT WORKED TOO.
