Drive in or backpack? Cast iron is heavy, and my recipes mostly revolve around dutch ovens and cast iron skillets.

If backpacking how many days? 1st couple days the meals can include perishables if you know what your doing. After that it kinda depends. If you can harvest trout then all you need is some basic ingredients and some tin foil. A September high country trip in certain areas and you can add grouse to your diet.

my fault, i meant backcountry backpacking, i had a brain fart, and ya i usually have trout daily when we go up there, jus lookin for some new ideas, the freeze dried $8 per bag meals are gettin old

I used to backpack alot when I was in shape and had less responsibility. I always packed a few some mountain house meals. Get yourself some flavored croutons. Crush them up to a mealy consistency and put them into a zip-loc. You would be amazed at how awesome fresh trout breaded and fried with italian bread crumbs smells and tastes next to the high mountain lake where you caught said trout. Not really adviseable in grizzly country though..it will smell really good for hundreds of yards. Instant potatoes are okay and fry up nicely as long as you remember to bring salt and pepper to season them. Instant soup mixes are also good. There there are a lot of good instant rice flavors. They sell them in boxes and packets and all ya do is boil it up. If you buy the boxed ones cut the directions off the box and put it in a zip-loc baggie with the ingredients. Hmm...fresh trout and rice pilaf at 8500 feet. Thats livin!
I have a couple of aluminum mess kits that have a frying pan with a lid and all the miscellaneous stuff fits inside. There is a little lever that swings over the top and makes it latch. Everyone sells them...cheap. I pack a box of instant jello cheesecake and then hope to find a huckleberry patch on the trail. Make sure you pack some margerine and some powdered milk which will be required to make the cheesecake. Anyway, one box makes enough to fill 2 mess kits. Make the crust in the frying pan portion then mix up the cheescake ingredients, toss in some huckleberries, put the lid on, latch it and find a suitable rock in a cold spring or feeder creek to place it on so that it will chill. After a few hours chilling in a cool mountain stream you will have huckleberry cheesecake for desert. Yeah, I'm fat for a reason and its not because I was born with a fat gene!

Actually the newer MRE's are quite good. When I hiked into Yellowstone we always a carbohydrate as a base like noodles, instant rice, or instant potatoes. The newer powder milk is much better then the old stuff and they make a butter substitute that damn near tastes like the same but doesn't need to be refrigerated. For meat try tuna fish, chicken, beef, or pork that has been precooked and comes in a foil packet. This also does not need to be refrigerated and is pretty damn good. You can also get a bread mix that easy to fix and fills the empty hole. Granted it won't come out looking like a loaf of wonder bread but with some butter you won't care.
Key is to load the meals with calories. Get some small generic season shakers or small zip lock bags and load up on any spices you like. A dry gravy mix is also a good thing to have. You need to be creative when cooking in the back country. I've had some damn good meals there...

For a dry gravy mix try the Shilling Sausage gravy mixes.....tasty on anything or even by itself. For a desert try stewing dried fruits. Add bit of sugar to taste after serving. Instant oatmeal packets in a myriad of flavors. Small package of real dried bacon bits and some garlic or onion flakes will go good with instant spuds. For trail mixes go heavy on the nuts and dried fruits. If you like it then heaven on day 4 is a can of spam. Slices toasted quickly over coals.

If you're cooking by campfire, buy cornbread mix in the envelope that only requires added water and cook that up in your aluminum fry pan. Just remember to grease it and get it hot before you pour in the batter. A few strips of bacon works great for the grease.
Make up a package of that gravy with torn pieces of dried beef in it. Camping version of Sh!t on Shingles!
Little Chief Fry Bread mix can be repackaged for smaller proportions. YOu can find it in some stores or online at http://www.lcspecialtyfoods.com/files/frybread.htm Easy to make over a campfire.
In the soup section of the store, look for a package of dry potato soup mix. I forget the brand, but you can easily add ingredients like fish/bacon/ham/sausage to make a yummy chowder. You can also add veggies like corn or asparagus. Also add cheese to it.
Do a search on "home made mixes" and you'll get dozens of ideas more taylored to your preferences too.

Oh wait... you know about our tilla omelets, right???
Bring some eggs (I would use a plastic jar with screw on lid and break them into that) and ziplock bags with whatever you like in your omelet, onions, peppers, cheese, ham... (don't know if this works with powdered egg, but it should!)
Boil a pot of water. Add your mixed egg and all the ingredients for the omelet to a quart sized ziplock bag and seal. Drop it into the boiling water and cook till done. You may have to remove the bag and squish it to redistribute the eggs once or twice.
When it's done, open the bag and grab a fork! Virtually no cleanup!
