It's mostly the same for both. Remove potential competitors and probably an instinctual response from their freshwater juvenile life history to eat eggs for food.

My theory has always been Salmon do it for the reasons Goose stated - for a fish to ensure the survival of ONLY their offspring. Steelhead, on the other hand, do it for food, just like the Cutts. No one knows for sure though...

That's one of those questions like.... Why do salmon jump so much in the rivers? Some say they're loosening up their eggs but I see big buck silvers jumping as well. Who knows.

in 19 years of steelhead fishing, i've had 2 actually swallow the hook -- one was on eggs 3 years ago, the other on soft plastics 3 weeks ago.

salmon on the other hand, if i plan on releasing some fish, i always try to get a quick hookset because kings and silvers will usually swallow the hook if you let them chomp on eggs for too long, and be bleeding to death by the time i get them to hand.
