Decided that this was a good weekend to stoke up the smoker. Wanted to smoke a couple pork roasts for pulled pork, plus a couple pork loins that I stuffed with an Italian sausage mix. Ended up with more sausage mix than I needed so got a brain fart to try it as stuffing wrapped in chicken breast. Here's what I came up with....
Flattened some boneless/skinless chicken breats.
Placed a generous quantity of the sausage mix down the center of the breast [mild bulk Italian, finely diced red onion, some coarse ground mustard]. I then added some chucks of some smoked mozerella cheese that I had smoked previously.
Rolled the breast up with sausage and cheese inside.
Wrapped the rolled breasts with honey/maple bacon.
Then rubbed some seasonings all over it.
Smoked it for about 4.5 hours this morning in my Bradley using hickoy briquettes. Here's the results....yummy!

May not be the most attractive item on the plate [kinda looks like a big doogie] but they turned out very tasty. I'm doing up another batch today with some changes....some will have left over smoked mozarella cheese, while others will either be my smoked horseradish or smoked pepperjack cheeses. Also going to use a different rub - mix of brown sugar and chili powder.

Nicely done! A little fennel scented bechemel and a sprig of rosmary would dress a slice of that right up.
Did you use butcher twine or skewers?
