My new favorite brine new
      #391000 - 12/10/09 04:34 PM

1/2 cup kosher salt
1 cup brown sugar
1 cup whiskey
1 tbsp cayenne pepper
1/2 can chipolte peppers

Toss everything and the fish in a large ziplock, squeeze out the air. With the decreased salt I let mine brine for three days. If you get the chipoltes or the sauce they come in on your hands don't rub your eyes and definately do not, I repete, DO NOT go take a leak.

Gloves man...use gloves! I learned that lesson when I was making chili for a contest. I chopped up jalapenos and habeneros early in the morning then took a shower. Put my contacts in AFTER the shower and it was like I got maced. Capsaisin is neat.

Anyway, do you put in the adobo sauce along with the chipotles and how big is the can? Looks like a good brine--i might give it a try next week.

Yup, the sauce goes in too. I'm thinking about upping the sugar a bit on the next batch. I like the glazing that sugar provides, and sweet and hot is the ticket for me.

My other favorite brine is, excuse the spelling, Chamborge Liqueur and honey. Purple smoked salmon makes some people do a double take, but berries and salmon are a classic combination (IMO).
