Last weekend I was fortunate enough to find about 2 dozen chantrelles. They were all fresh and looked like they had just popped out within a day or so. When I cleaned them and cooked them I noticed they did not have that wonderful chantrelle smell or taste.

Then this evening I found 4 of them growing near where I live and these did have a strong smell and taste (unlike the others).

Any ideas why the two "catches" would have different amounts of chantrelle-y smell? Do you suppose it had to do with where they were growing or what?

Perhaps its because the ones were drier than the others? Interesting question.

I think I solved the mystery! The ones that didnt taste quite as "chantrelle-y" were white chantrelles. The white ones look exactly the same but are a little paler
