Chantrelle Pickers
      #45420 - 09/23/01 09:02 PM

Its that time of year again....please send me a map of the best spots . Actually I stumble upon some in the woods during hunting season. Anyway I am scheduled to be a Mushroom picker for upcoming weekend entertainment. I also get to scout elk during my chantrelle hunt.

Holy Heck what a pile of mushrooms. I got a grocery bag full in a hour. Those were the chantrelles...only ones I picked. I don't know what the other ones were so I left them. Tons of the weird ones including a coral type, toad stool type, small ones...place was a mushroom viewing zone. Any way can you dry these chantrelles? Best way to eat them? I am pretty much a mushroom amatuer, but a excellent picker .

Marty,

You can saute chantrelles in just a bit of butter and then freeze them. My neighbor, a mushroom expert, does this with good results. He also goes after the valuble matzutaki's (sp?) We have a good supply of both most years between his place and mine.

I have only used the chantrelles myself, as I am not comfortable identifying the matzutaki. I use chantrelles in omelets and italian dishes. Put them in the dish late in cooking, as they will disintegrate if cooked too long.

Aunty
The matsutake looks like it is more in your area than mine according to the mushroom map I found.
Matsutake Mushroom Fruiting Map Kind of surprised we don't have them up here too. I agree you don't want to make a mistake identifying mushrooms. The book we have says to soak them in cold saltwater over night to get the bugs to come out...sounds reasonable. I have heard we have some fancy varieties up this way but I am mushroom illiterate at this point.

I looked that site over very carefully and learned a bunch, thanks Marty.

Those pickers guard their spots. They're worse than a steelheader with his secret hole! I must be mistaken about having any around here.

If prices ever climb to $600 a pound again, I might take up a new hobby!

This is something I have always wanted to do. Here in Seattle when I lived in an apartment this neighbor lady, who was 70 years old and still riding around on a bicycle, gave me a sack full of chantrelles since I had drank a bottle of my homemade black berry wine with her around the fire pit the week before. They were very good. She actually picked them around the neighborhood in parks which she would not reveal.

Can you spot the shrooms while walking, or do you need to look under fallen leaves?

no such thing as a stupid question now.

The chantrelles poke through pretty good and their color really stands out against green moss of the forest floor. Not to hard to spot them if you are in the right area.

I find chantrelles when I walk the deer trails on my property. They are found in both conifer and hardwood forests. We have mostly fir and hemlock trees. I just walk along and look under huck and salal that has some exposure to the sun. They are yellow and range anywhere from 2-8 inches. I never have any leaves to look under, they are above the soil and needle debris.

There are a few look alikes, so it may be best to get a field guide.
