The best thing about that finished turkey carcass is making soup from it. I boil the whole carcass down in my crock pot for about 12 hrs, give or take a few. Keep it slow boiling and keep adding water. Try to get about a gallon of broth. Then strain all the broth thru a strainer. Put in fridge overnite. When ready, bring broth to a mild boil, add water to get disired amount. I try not to add much too much, you want that rich, artery clogging taste. I dice up a few potatoes and add first. Cook them about half way and slice up a few carrots and add next. I'll dice up some celery to add also. maybe a can of corn, peas, or whatever. Just before the taters and carrots are done, add the celery, vegies, and some noodles, I like the cheap egg noodles and cook until the noodles are done. I usually add a fair bit of salt, some pepper, some garlic salt, and a sprinkle of celery salt (yep, artery salt!) about half way thru cooking. Season to taste when all done. Some Bisquik dumplings always go perfect with this soup...or stew if you add as much of the refridgerator like I do! lol
